As noted Bugme and other note pad programs will fix #1

As for short cuts, there is no 'graphiti area' so there isn't any writing. All text is keyboard entered. There are shortcuts for text to complete typing in certain applications, in my case in email, a lot of common words are completed for me and I have shortcuts for various signatures.

Voice dialing can be fixed, but it's a $20 software package from Palm. There is a trial on the CD. But it doesn't work with GoodLink (the package that I use) and it doesn't work with a bluetooth headset to the best of my knowledge. It didn't with the 650's and I don't think it does with the 700p either. (It is clearly incompatible with GoodLink, so I have not tried it). Yes, I miss voice dialing too, I too have used it a LOT on all my previous moto phones. But when I consider what else the 700p gives me, I do pretty much have one-touch speed dials for the people I call the most. For the rest, I wait until I'm stopped or at a light to find them.
