1. where can find the what OS version im running on it- a number of programs i want to install have listed various version numbers and i have not found anything that blatantly shows it (or i have missed it- entirely possible).

You can find that from the Home/Applications screen by taping on the Menu and then Info. The topmost line will show that.
2. i know this was poster earlier, but i wasnt sure if there were any newer developments: is there a free instant messenger that works with AIM? or is verichat the only real solution?
The free AIM is offered by the AOL UK website. Google is how I usually found the download link. Its ok, but not great. Verichat, Chatopus, and a few others were listed here as something better.
3. i am on tmobile, i have not set up the internet yet, but on my old phone i could send pictures or sounds without the internet, now i can send them to my email account but i cannot recieve them. according the user manuel i do not have a "1x" icon that is apparently required, it also mentions verizon, but i would assume that tmobile should have the same data services. so i guess what i am asking is, is there a way to send mms without signing up for the tmobile internet?
In a word, NO. You need a data plan in order to send data. When you are able to send data, you will see green arrows above the signal strength bar.
4. i am curious as to what apps you treo 600 veterens have. like what are YOUR essentials? or at least ones you would strongly suggest getting (games included ;] )
On my 600 (I have moved to a 650 since Christmas, but still have the 600) I have:
