Chris helped you nicely with customized ringtones that
you hear, but I think what you want is called a ringback tone (Verizon) or an answer tone (Cingular). (I don't know what Sprint calls them because their website is too obnoxious to have a handy search box.) This is where the
caller hears a custom ringer while waiting for you to answer. This is available as a subscription service through your wireless provider since it's a modification of your carrier's service, not your phone.

As Chris stated, just press the Menu button (above the Mail button) and select "Category..." under the "App" menu. Then assign any/all appllications to whatever category you want. If a "Games" category isn't there, create it by going to "Edit Categories..." at the bottom of the Category pulldown menu, tap the "New" button, and create it.
Power user tip:
For directory-level customization, you can arrange your directory however you want (with some restrictions) using handy 3rd party utils like
Filez, which I love 'cause its also free. You'll probably want a launcher app like
ZLauncher or some equivalent which can use aliases/shortcuts to point your Treo to where you're put your apps. Most of these launchers also have directory management capabilities.
