I am trying to convert my Treo680 from Cingular to Verizon, is this even possible?

No way, they se 2 different systems, Verizon with CDMA and Cingular with GSM. Why don't you sell your GSM treo 680 and buy CDMA VerizonTreo 700 . CDMA phone is cheaper than GSM phone (similar model)
