700p is a CDMA (Sprint, Verizon, Alltell and a few others) phone supporting high speed data via EVDO. Also has 1.3mpx camera module.

680 is an EDGE (Cingular, TMobile and many others) phone that does not support the GSM equilevant of high speed data (UMTS/HSDPA). It has a .3mpx camera - same as the 650. It also has slightly more user memory available, upgrade phone application, and increased stability.

The Treo 680 is also lighter and smaller than the 700p. It all depends on your needs. If Internet speed and camera are big priorities, the 700p is a better choice as it will definitely outperform the 680. In my (non-extensive) speed test, the 700p downloaded a 600k document in 15 seconds vs 72 seconds for the 680. That in mind, I find the size of the 680 to make it a much easier phone to carry and the phone application is a great UI (user interface) improvement. I would love to have that app on my 700p, but I'm sure it'll be a matter of someone hacking the ROM to do so.
